Ultimate Reset - Day 6

“Dear Diary, Nothing really exciting happened today.”  Haha, but really it was my day off, and I spent most of it sleeping.  I have been SO tired lately.  I don’t know if it’s from the Reset or just getting adjusted to a new job or what.  I had so many chores that I decided to ignore while I got caught up on Facebook, caught up on blog and played some video games.

I did not feel like making the tempeh, so I cheated and had eggs again for breakfast.  It’s the last time for two weeks!  I was also trying to use up some ingredients in my fridge, so I decided to make cookies.  Really, the stupidest idea ever, but I guess after last night I wanted to test myself.  I did end up having ONE, mostly because I really wanted one, but somewhat because I needed to make sure they were edible for my coworkers.  I tried a new recipe so I had to check.

I had leftover lentil salad and microgreen salad for lunch.  I woke up so late in the day I didn’t need a snack.  I proceeded to RUIN my dinner – I completely over-baked (ie BURNED) the root veggies and the zucchini soup tasted soooo bland.  I am not a big fan of zucchini anyway, so I’m not sure what I expected, except I did see someone on the message boards say that this was their FAVORITE recipe from the Reset, so I had high hopes I guess.  On the plus side, I get to eat it again tomorrow for lunch (heavy on the sarcasm).

I hope to be feeling a bit more rejuvenated tomorrow after all my sleep today.
